When the crisp handmade phyllo from Smyrna arrived in Crete, it was reassembled with mizithra and together formed the notorious bougatsa of Mr. Apostolos in 1922. When Apostolos Salkintzis set his foot in Lion's Square, he decided to build here his little hangout which he called, "The Lions". His sons, Anestos and Kostas, continued his legacy after he passed out, and thus this beautiful patisserie came, after all these years, to the hands of Giannis.

Apostolis grandson, Yannis Salkintzis, takes on "Leontaria".
In the years that followed, Giannis extended the shop and decided to call it "PHYLLOSOPHIES", which means the wisdom of the phyllo... a reference to the old, wise recipe of his grandfather.
The historical shop, now called "PHILOSOPHIES", grows and acquires new character through a total renovation with respect to its history.
"PHYLLOSOPHIES" grow even more and acquire new, state-of-the-art facilities to meet the needs of the new era.
With respect to our tradition and customers, "PHYLLOSOPHIES" proceed to a second renovation that brings the Smyrna of 1922, closer to the present.
